
Well they’re everywhere now. I used to have to explain what they are, more often since naming my dog after them. What a treat it was to come home from school to find that my Mom had made Whoopie pies. Well I hope that recipe wasn’t a secret because here it is…

Whoopie Pies (as read directly from Mom’s recipe)
In a large bowl…
1 cup shortning
4 eggs (leave out 2 whites)
2/3 cup cocoa
2 cup sugar
Beat until creamy, add
1 cup milk
In separate bowl…
4 cups flour
2 teaspoons baking soda
1/2 teaspoon salt
1 teaspoon baking powder
Add to creamy mixture alternating with 1 cup hot water
Beat well.
Using teaspoon, put on cookie sheet about 1 inch apart. Bake 350 for 8 – 10 minutes.
Let cool and fill.
Filling
2 egg whites
4 tablespoons flour
4 tablespoons milk
2 teaspoons vanilla
4 cups 10x sugar ( powdered sugar)
1 cup shortening or margarine
Beat egg whites till fluffy. Add next ingredients and beat till creamy. Fill cookies
